Led by Bordeaux-born Executive Chef Herve Borghini, DOLLY's dinner menu is a love letter to European bistro classics, featuring his signature dishes, such as Steak Frites and our iconic flaming Bombe Alaska.

As the night unfolds, DOLLY transforms into a moody haunt. Guests are invited to descend beneath Bourke Street via the iconic Art Deco staircase to uncover a dimly lit, underground cocktail bar and lounge where classic drinks are reimagined.
